package.json: drop scripts that named the deleted coordinator and a missing crate

start (node src/odin-coordinator.cjs), check and test (JS gates over the
deleted src/ and test/), muninn:build and muninn:start (muninn-daemon is
not in this workspace). gjallar:persona and rust:test stay. This belonged
in the Node coordinator deletion commit and was left unstaged there.
